Lunch Idea - Week Two - Ten Minutes

I frequently buy an omelette sandwich for lunch from a place called Meal Deal which takes around 10 minutes to prepare. I find this simple sandwich quite tasty.

2 slices of brown bread
3 free range eggs
2 table spoons of olive oil
½ onion, diced
2-3 Mushrooms, diced
½ red bell pepper, diced
30g of cheese of choice (Optional)


1. Mix the eggs with a sprinkling of salt and black pepper. Heat the oil in a non-stick frying pan and throw in the onions, peppers and mushrooms. Stir while it cooks for 3-4mins. Pour in the eggs and cook over a medium heat until the omelette is almost done.

2. Sprinkle on cheese (optional) and continue cooking until the omelette is just set in the centre.

3. Put the pan under a hot grill if you like your omelette more well done and for it to have a bit more body.

4. Serve from the pan onto the wholemeal bread slices.
