Monday Summer Salad Recipe - Sun Dried Tomatoes, Olives, Avocado and Cottage Cheese with Pineapple



Salads are relatively easy to prepare so the first recipe in the YouRCooK Summer Salad Recipe series is a vegetarian one which I had for lunch today. I don't measure out quantities but just throw a few of the ingredients into my lunch box as shown by the photos. The salad won't get a 10 out of 10 for presentation but I would give it a 10 out of 10 for taste. I love sunflower seeds and eat them as often as I can.


Ingredients

Lettuce
Olives
Sun Dried Tomatoes
Cottage Cheese with Pineaple
Avocado
Sunflower Seeds

Extras

Black Pepper
Garlic Salt
Lemon

Preparation

Place the desired quantity of lettuce into the container, add some avocado followed by olives and sun dried tomato, cottage cheese with pineapple and top it off with a sprinkling of sunflower seeds. I squeezed some lemon juice on it, added a little bit of black pepper and garlic salt. Feel free to add other ingredients. Hopefully you will enjoy this salad if you decide to try out this recipe.
